塔拉珠（Tarrazú）的咖啡在哥斯大黎加乃至全球都享有盛譽，佔該國咖啡產量的40%。這片產地海拔平均在1,500至1,900公尺，高海拔和溫度低的環境使得咖啡果實成熟得緩慢，因而產出更細緻的咖啡豆。這樣的海拔條件也符合極硬豆（SHB）的標準。

塔拉珠合作社（Coopetarrazú）位於哥斯大黎加的聖何塞省，專注於嚴格控管咖啡漿果品質，從幼苗的種植到生豆的出口，並建立了一套完整的追溯系統。當地的農民更得到合作社相當程度的支持，品質標準定期檢視，每一位員工遵循著嚴格品控系統。

牧羊人處理場（La Pastora）是塔拉珠合作社於1970年所設置。合作社現今已有4,650多名成員，為塔拉珠最大合作社。而La Pastora批次，正是來自這小型農場精心處理的咖啡生豆。

在合作社裡，生產線猶如精密的發條一樣，運轉順暢，從中央收集站出發的車輛，無論是皮卡還是自卸車，相繼抵達，滿載著新鮮採摘的咖啡漿果，將於濕處理場下一階段的處理。塔拉珠合作社的農民，就是這個區域咖啡品質的保證，他們在咖啡生產過程中付出了非常大的努力，也造就塔拉珠咖啡成為優質的代表，享譽世界。
